Vegemite & Cheese Scrolls

The kids last couple of lunchboxes have had their sandwiches returned in them. I think the heat is having a icky effect on the bread. So I found a couple of recipes and fiddled with them and made these tonight. They probably could look nicer but they taste delicious!!! The kids have approved them too! Yum!
Recipe -
3 1/2 cups SR flour
4 Tbsp butter
1 1/2 milk
Vegemite
Grated cheese
1 egg
Rub butter into flour til is crumby. Add milk and bring dough together, give a light knead on a floured bench. Roll out into a rectangle shape. Spread vegemite over pastry. Sprinkle cheese all over. Roll up from the long side and cut. Brush pastry with beaten egg. Lay on tray with cut edge facing up. In mod oven for 15 mins.

  1. On moving to Brissy from Melb when Brenton was 7 lunch box wars began lol. Coming from cooler Melb where they had air con in hot months and bags inside I was shocked to discover school bags were left outside on the veranda's in the heat all day up here and no air con inside whatsoever! He would return home from school hot, tired and hungry with a full lunch box. I tried all manner of swish lunch boxes and recipes and in the end resorted to letting him buy his lunch most days. The canteen had a healthy eating policy and the prices were very reasonable. When I added up what I was spending on making his lunch and it was being thrown away compared to buying at the canteen it was much the same cost in this case. I am so pleased those days are behind us given the climate up here.

    Those scrolls of yours look delish!

  4. These look like something from bakery's delight! Surprisingly simple and a fantastic alternative to 'the sandwich'. Definitely worth a shot. Thanks for the idea x

  5. Kimmie- Amelia's class just leave their bags outside under a metal awning, I don't know why they don't at least bring the lunch boxes inside. She is eating the scrolls though and Wes is loving them too.

    Kels - I am also going to try them as pizza scrolls, tomato sauce, ham, capsicum etc all finely chopped. I'll let you know how they go.

    FDU - You can do them as sweet or savory, I love cinnamon scrolls so'i going to try them too!

    MM - that's nice of you to say but I think I rolled the middle a bit tight cause some of the popped up in the centre!
